WEEK 168---the "Avengers" of craft beer--PART 1 of 2

Thanks(or no thanks?) to Hollywood movies---all of us who are not comics fans somehow knows that "Avengers" sort of represents an alliance of some of the best in the world ( or was it out of this world?) in whatever he/she is good at.....
不久前和啤迷朋友聊天,假设性的以一家酒吧或瓶子店当日清单自选心目中最想要<复仇者联盟>阵容的话会有哪些酿坊品牌入围。
漫威迷们喜欢把强强联手阵容称为<复仇者联盟>,虽然是不是真正意义上的世上最强者联盟是见仁见智的问题,但凡说是<复仇者联盟>组合的至少可以被理解为超凡高手的集合。
During a recent conversation with a beer geek friend---i was asked to name which might be some of the breweries that will make it to my "Avengers' list of the day---this is of course a hypothetical question with a "wishful" answer---though one thing is for sure--different people will have his/ her own list of 'craft beer Avengers"---the list will very likely look different---mostly influenced by what sort of beers one have tasted or can find so far( be it where they live or via beer mail) + one's palate appreciation level as well as personal taste preferences....
craft beer界,什么样的阵容可被称为<复仇者联盟>当然没有定论,就像顽啤主张一路强调的,要确定一款酒(甚至是一家酿坊大部分作品)是Bad是低劣的并不难,但要定论哪一款酒哪一家酿坊是Best是世上最佳则会很难,不同啤迷心中都会有一把不太一样的尺,同意Best比同意Bad的评定基准考虑因素要复杂的多,这可以是关乎不同人所喝过/能找到啤酒水准高低,也会受到自身味蕾鉴赏力和口味倾向等因素影响,不同啤迷自选的<复仇者联盟>酿坊品牌阵容肯定不尽相同,这会是个有趣的观察。
个人的假设性自选酿坊品牌阵容当然只是理想中状态,要在本地同一时间看到/喝到这几家酿坊作品基本只能通过自己设法国外找来 -
To see these breweries all appearing at say a bottle shop or a bar in Asia will be quite a miracle to say the very least--for all 4 to appear here in craft desert KL will be impossible--except maybe through personal beer mail efforts by geek/s.....

Here's my "wishful" list :-
1) Russian River
I have said it before and will say it again--it was Pliny the Elder which reshape my understanding of what a delicious/balance IPA can taste like--it also saved me from the brink of wrongfully denouncing IPA as some sort of "only bitter no finesse" sort of one-dimensional beer---partly no thanks to my shallow world of IPAs in the early years of craft exploring.
以均衡美味IPA美式桶陈酸啤享有盛名的美国加州酿坊,原本今年五月初会在比利时布鲁塞尔和绝对大师级天然发酵果酸啤酒酿坊Cantillon合办的好友酿坊活动因为疫情影响被迫取消,消息一出众多啤迷一片哀嚎,这家酿坊作品在啤迷心目中地位是毋庸置疑的。
或许除了多年来只限期内用从不外卖但今年首次破天荒装瓶首卖的三倍印度淡陴(Triple IPA)作品 Pliny The Younger算是稀有/特限量作品之外,这家酿坊更多被啤迷认可拥戴的例如Pliny The Elder Blind Pig常态款IPA作品,以及好几款也算常态的美式酸啤作品,都是高质优秀同时也平易近人让人想一喝再喝的作品。
But of course Russian River is not only about IPAs like PTE/PTYounger or Blind Pig---they are much more than just hops flavours brew---with wine making background--they have some really tasty American Sours--which are not one dimensional sour--in contrary these are well made, really balance and delicious American sours.

2) The Kernel
The UK craft scene have seen some new/newer names popping up in the last 3-4 years---among these new/newer breweries--The Kernel is kind like an "old new" name---perhaps this is one name which would not be mentioned instantly by some "newer' geeks since there are "newer/more famous" names--- in a wayThe Kernel is sort of like the "older big brother"---this is quite a low key brewery which have kept it going the way they like it---not chasing after trend( think NEIPA) but just do what they do best.
近年英国有不少表现出色的新晋酿坊,在这些新晋/新贵酿坊中,The Kernel可以被归类为英伦craft beer界的老大哥/有点年岁痕迹的老新派酿坊品牌了,酿坊保持一贯低调作风,一路走来以扎实酿酒功力做好自己拿手酒款,不跟风起哄的抢着酿最新流行/大热酒款(比如NEIPA),反之只是保持好些自家做得好的基本款/常态款,比如“传统”IPA,比如Saison,比如Table Beer等等。
如果以食物菜肴形容The Kernel作品的话,就像是可以经常吃/吃不厌的家常菜,或许朴实无华但却是生活中会寻找的美味慰藉,虽然好像不会有什么大惊喜但基本可以肯定不会有惊吓。关于这家酿坊,真要说有什么问题的话,那就是由于主创酿酒师非常注重啤酒鲜活度,所以坚持不把啤酒送到亚洲来。
For years they keep brewing what they are good at---those 'traditional" IPAs---the saison---the table beers--- if  I were to describe what these beers seems like---they are kinda like home cook food---nothing fancy--likely not going to provide your taste bud with a big pleasant surprise but at the same time will never leave a bad taste in your mouth---the only problem with The Kernel? you can't find it here in Asia---NOT until the day the owner change his mind about beer-ecology of sending out to far far away places( which i highly doubt if that day will ever come).

3) Hill Farmstead
If we were to put aside the vanity factor of this brewery being named as the world's BEST brewery few years in a row by a seemingly "independent"(no more) beer ratings website---but purely basing on  quality of their beers tasted---then i would not hesitate at all to say this is one brewery where i would love to drink more of their brew( if fxxking possible at all).
先不说是不是因为几年前某评酒网站连续几年的世界最佳酿坊光环带来的虚荣感所致,就个人所喝过这家好些不同风格啤酒水平来说,绝对不介意一喝再喝这家酿坊更多其他不同作品,当然问题还是一样,那就是,平时除了去酿坊位于美国Vermont州偏远农场品饮室之外,要去哪里找到那么多Hill Farmstead不同作品?
这家酿坊过人之处在于很多不同类型风格啤酒都有出色作品,有被全球啤迷大力追捧炒卖非常稀有作品,也有平实美味常态作品,无论是可以大口喝的美式或德式浅啤酒(Lager/ Pale Ale/ German Helles,或是比较注重展现啤酒花鲜香风味的IPA,易喝可口的Saison到美式酸啤或黑啤,这家都驾驭自如。
This is one brewery comfortable with many different beer styles--in fact not only comfortable but they have many outstanding ones---not just IPAs or Saison or Sours or Stouts or BA blends---but also seemingly very easy drinking Lagers/ German Helles/ Table Beer/ Pale Ale.....
Again--the question is if you don't live within the radar of that farmhouse brewery in Vermont---how do you quench your Hill Farmstead thirst?

4) Side Project
Had my first encounter with Side Project back in 2015 in Copenhagen during CBC---they were there pouring to people who were lining up( probably not as long as some big name brew would see but still there are constantly people who are asking for their beers).
2015年去哥本哈根啤酒庆典时第一次接触到这家美国密苏里州酿坊作品,在当时众多盛名酿坊云集会场中毫不逊色,排队领酒啤迷虽不至于像一些特受热捧限量啤酒那样长长人龙但也是不间断。就像酿坊品牌名称字面上意思那样,2013年开始时这只是主创酿酒师在另一家以大黑啤盛名酿坊打工空闲时,在得到许可情况下玩票酿造自己想要,以桶陈美式酸啤和农场风格啤酒(SAISON)为主的其他类型风格啤酒。
从“玩票副业”到开创自身品牌酿坊,Side Project用了很短时间就逐渐征服各地啤迷味蕾,虽然酿坊主要以富层次的美式酸啤和农场风格啤酒被啤迷称道,但这家其实也有被追捧的限量难寻大黑啤作品,问题只在于没机会通过美国在地首卖机会买到的啤迷们要在怎样的机缘下才有机会一尝究竟。
As the name suggested the whole thing started as a side project while the head brewer/owner was working with an established brewery who are famous for their big stouts---Side Project was mainly about barrel aged sours & saison---but of course they do have big stouts of their own which is proving hard to obtain during first release day---personally Derivation is one dark brew i would love to taste though generally speaking stouts priority been on the decline on my personal list of wanted beers.

WEEK 167 --- Breaking up the BEER world

The fact is---everyone knows what BEER is--but say if we take the word apart?
把大众认知中的BEER字字拆开来看看另一个啤酒世界是什么样的。
Best & Bad
It was quite some  years ago--at a free flow party hosted by the Embassy of Belgium here in KL with some Belgian craft beers available for the day---friend of mine was handling the counter as part of his duty to introduce what's what to guests who are new or have no clues whatsoever about craft beer,  Along came a man who said ' give me your BEST beer".
几年前一个比利时大使馆活动上,一位来宾对站在吧台介绍当天几款不同类型啤酒的负责人说,给我你最好的啤酒give me your best beer),这话乍听没什么问题,因为消费者买东西有时也会说给我最好的,当天活有提供几款不同品牌/类型啤酒,有选择情况下要求最好的听起来合理。
同样一句话,听在有一定品饮经验啤迷耳里就不同了,在craft beer世界中,best beer是非常见仁见智的事,有啤迷会认同比如评酒网站的世界最佳啤酒排行榜,有的啤迷完全只根据自身喝过啤酒分高低,那位先生的给我最好啤酒要求听起来就只有一个感觉,说明了他对craft beer还没有基本概念。
That statement seems logical enough because that's how many consumers( be it buying daily items or say an expensive item) would say trying to get the BEST out of whatever they are looking to get---but in the world of craft beer--that statement is telling something very obvious---that this guy don't have a clue as to what craft beer is....
craft beer is about varieties and choices---BEST beer will always be a very subjective matter most likely ended up with no conclusion rather than anything confirmative--it's in a way easier for most geeks to agree that a particular beer is of better quality than the other(same styles brew)---much like food where the same item cooked be different chefs might taste vastly different in terms of deliciousness alone.
一定程度上来说,啤迷之间共识是,虽然很难确确的说哪一款哪一支啤酒是最好的,但可以确定的是不同类型风格啤酒中都有酿得非常好的顶级作品,然后同样类型啤酒中也有酿成难喝的作品,基本原理就像同样菜色,就算用同样食谱同样食材,就是有人会做的比别人好吃或难吃好多倍那样。
至于怎么界定什么是顶级作品什么是难喝啤酒,虽然有一些评酒网站数据或比如说像BJCP啤酒类型指南可供参考但其实也没有绝对权威的硬性鉴定规格,啤迷都是经历不同阶段性品饮经验累积开拓味蕾鉴赏力後才具备一定程度分辨能力。
It's not hard for most geeks to agree on what might be some obvious signs of a BAD beer(provided one has had a certain level of tasting experiences/ palate exploration) ---but it will be harder for geeks to agree in unison which will be the BEST beer as personal preference factors would come into play in a big way since personal exploring/ tasting experiences is the key to building one's tasting ability (though things like referring to BJCP beer styles guidelines/ others tasting notes at times do help).

Excellence & Expectation
Expectation(along with curiosity) is part of the main driving factors why geeks keep seeking for new tasting experiences-- particularly if a beer is highly expected---it's a fact that just like fashion or sports industry---there are star names in the craft beer industry--from a particular beer to brewers to breweries---some would somehow carry more expectation from geeks alike than the others--the main reason why some people would line up hours(or even the night before) for a beer/new release is because he/she has high expectation for a excellence brew (fuck you if re-selling profit is your only motive) 
有期待所以有动力,追求上佳酿品带来的味蕾享受是很多啤迷热衷的主因,在craft beer世界中的确存在明星品牌明星酿酒师或者说备受关注新贵现象,啤迷彻夜不眠排长龙只为买到限量发售的某款啤酒是特有的现象,出现这情况除了是由于酿坊以优质酿品为人知之外,另一个原因是啤迷对新发布酿品的期待度。
当然,啤迷对一款啤酒的期待并不等于说期待值一定能得到百分百甚至超越预期的回报,啤迷更多时候是在惊喜,平和或失望(或非常偶尔的惊吓)情况下不断品饮前行,举个例子,最近终于多年後第一次推出瓶装的美国酿坊Russian River经典盛名作品Pliny The Younger三倍印度淡陴(triple ipa)就让全球很多啤迷好奇期待,让人期待值满满的这款印度淡啤是不是就一定好喝到不行?喝过的啤迷之间答案并不一致,有人激赏有人觉得只是一般。
Of course not every beer with high expectation from geeks would satisfy or pleasantly surpass that expectation---take for examples the recently release for the first time ever Pliny The Younger from Russian River--some love it while some thought it's probably more hype than real.
It inevitable that when it comes to a beer---some might disappoint and some might even give you an unpleasant "scar" in the mouth---but whatever the outcome might be---no matter if expectation meet it's match with excellence---geeks would carry on exploring.

Exclusivity & Easy to Get
It's a fact that sometimes(if not all the time) some people would go in search of a particular beer/releases---either to drink OR to resell for handsome profits( you heard me earlier already) OR to show-off ( because i can?)---whatever the motivation might be--it's true that some beer are much much more hyped/rarer than the others and that's a fact.
千方百计寻找限量难寻啤酒是craft beer世界常态,虽然找酒的人不一定是想真心嚐味的啤迷(可能有只想首卖原价抢到後几百甚至过千美金转卖牟利的人,或只想炫耀所以盲目高价买入的土豪),但限量难买啤酒的确奇货可居,也是不少啤迷梦想啤酒清单中想试味的瓶子。
好些被啤迷认同为高质酿坊的啤酒会限量难寻并不是像一些其他行业名牌产品那样故意做成限量以显示稀有度,而是因为酿坊产量真的小(又或是酿酒食材供应有限),所以能酿出来装瓶的啤酒很有限,有的酿坊实行会员制,有的需要抽签决定谁能买到,种种客观条件限制让限量难寻但确实美味好喝的啤酒成为追逐目标,也让一些嘲笑的声音出现,说其实会觉得一些盛名难寻啤酒那么好喝是因为稀有度和虚荣心作祟,要是这些限量啤酒突然有一天到处能买到的话,啤迷还是不是会那么热捧追逐觉得好喝到不得了?
Unlike some other industry where limited version with small production/quantity available for sale is a form of manipulated marketing strategy just to get on the "rare is gold" kinda mantra---in the world of craft beer---some breweries/a particular beer are/is really too limited in production quantity that one need to either be a member to be able to buy--get in luck with lottery system to qualify or simply line up hours to get one.
Hence it's quite legit for some people to ask the question " if one day a particularly hyped/rare/very very limited brew is now easily available at your local bottle shop/bar---would it still taste special?


Recipe & Recreate
Brewing a beer is in some ways similar to cooking or say baking--it's all about the process of making something happen from base materials---though the world of craft beer encourages innovation and creativity---there are actually some boundaries pertaining to what constitute a particular style of beer---but brewers do at times like to recreate---for examples "traditional" IPA is essentially about the use of hops and mainly about bitter or bitter-sweet flavours----there are actually sour ipas/ barrel aged ipas and so on.. 
酿酒和烹饪或烘培在一定程度上有相似之处,啤酒的美味是通过酿造过程(又或再加桶陈熟成时间工序)完成,虽然craft beer世界崇尚自由发挥,但众多不同类型风格啤酒其实都有一定规则轨迹可循,除了个别类型啤酒有一定的范畴规范,不少酿坊酿酒师并不介意公开一些自家酿酒配方,在原有基础规范上,不少酿坊酿酒师都会玩再创造,比如说让意义上强调啤酒花苦涩甘香特质的IPA出现酸味版本,或是说让基本具备咖啡烤麦香黑巧克力特质的黑啤玩出各种不同风味等等。
Freedom to create/recreate is what makes craft beer so much more interesting that just being a BEER---though at times certain beer can go way off the mark because brewer/s tried too hard or had some " wicked thoughts" while creating it---it can be embraced at times as part of the fun ---though if the same brewery/brewer keep fxxxking things up perhaps for lack of basic/benchmark understanding then that will be another matter altogether.
可以这么说,不一定要死守既定规则是让craft beer变得好玩有趣美味多样化的主因,虽然像美食那样有些食物还是既有的比过度创新或Fusion混合式的来的好,酿酒师有时会把一款既有类型啤酒玩过头,比如说把基本注重清爽但有层次变化的农场风格啤酒(saison)玩到什么都不像,但在既有啤酒类型风格范畴中玩再创造还是个让craft beer变得有趣更多元的必要过程,所以就算偶尔喝到四不像的莫名其妙玩过火作品还是可以原谅的。

WEEK 166----The Hassle & Price You pay for Beer Mail into KL

We are (as in the whole fxxking world) living in unusual times for sure---social distancing has now become part of daily life( at least for now til very near future)---we cannot just show up at breweries or bars or bottle shop to get a bottle/a can/a pint like we used to--with most countries/cities closing their borders or having some form of movement restrictions---trying to get some form of beer mail coming in from other cities or overseas looks like one way of beating the situation though that option too is looking increasingly harder with both Europe and US facing very difficult situations....
不久前因为近年非常少有的收到国外寄来一箱啤酒,于是重温了一次多年前开始从欧美城市找酒整箱寄过来,为此而时不时跑到关税局领酒的过程。
有新朋友问说自己从欧美城市找酒进来本地会是怎样一个过程,这里就自身经验非专业简单分享一下:-

Anyway, if anyone of you particularly those living in Malaysia are somehow looking to get some beer mail in personally---this one is about what kind of hassle and price one needs to pay trying to get some beer mail into craft desert KL---this was done early in the year when the pandemic situation was still very mild world wide.....
so here's basically what one would go through:-
1) there's likely 3 ways of how one can get a beer mail in---firstly of course is buying online---secondly getting help from someone who buy on behalf and sent in---thirdly is getting some bottles as a gift either from a friend or relatives or someone who really likes you enough to sent you something.
Whichever way it might be---once the package reached Malaysia custom---and somehow did not get sent directly to your stated address---then you know your pack is being HELD by the custom.
1)会有国外寄来的酒箱子离不开三个来源,一是自己上网买,二是让国外啤迷朋友帮忙买,第三是有亲朋戚友或惺惺相惜的啤迷免费赠与,无论是任何来源,一旦寄来本地然后被关税局先扣住而不是直接送到家的话,那就只能是一个结果,收到邮政局通知後准备付钱给税才能收到箱子。

2) of course you can track where your beer mail is at if you have the parcel tracking code---from the time the pack leave port from whichever origin point---to say a 2nd transfer point--and then to Malaysia port---the best outcome will be that once you see the package reached Malaysia---it will come directly to your door within 1 or 2 weeks time---unfortunately---at least from personal experiences---that chance of beer mail coming directly to your door is LESS THAN 20%
2)无论是自己买还是被赠与,只要有箱子条码讯息就可网上追踪,从最初啤酒装箱送往欧美当地邮政或物流收集站,到几时离开寄发地或中转地到何时寄到本地都查得到,最美好结果当然是到本地後一两周时间内箱子被直接送到门口签收,事情就圆满了。可惜的是,个人经验来说,这个可能性只有大概不到20%,更多时候是箱子到达本地後会收到邮政通知说东西被扣在关税局。

3) Once your parcel is HELD at the custom storage---you will know because the POSTAL office will sent you a notice( used to be a letter---but the last time they sent an SMS)---once you get that notice---you have 3 options to decide how to proceed:-
A)  appoint POS MALAYSIA as your collecting agent( of course not for free--there's a handling fee ( i think it's around RM 50 plus whatever taxes the custom decides later which they will claim when delivering) --BUT FIRST u need to provide an invoice for the beer mail--it can be the actual one or an estimated one before they proceed.
B) appoint someone to pick up on behalf by a letter
C) go and collect yourself
3)收到邮政通知说箱子被扣住的话,基本只有三个处理方式:-
其一是通过付费委托邮政局全权处理,除了邮政局的基本手续费当然也要付关税局决定的税务总数。
其二是以文件方式委托他人帮忙去关税局处理。
其三则是自己亲自跑一趟关税局。

4) If you happened to live within Klang Valley ---then the place to visit will be the custom office very nearby the OLD LCCT--which is easily a 40 mins to 1 hour drive from KL area---depending on how busy the custom office is during your visit---with driving time included----it would take anything between 3-4 hours at least to see the beer mail parcel safely at home.
4)因为箱子是被扣在关税局储物间,这意味着住在雪隆一带的啤迷无论选择二或三都必须去位于雪邦旧廉航机场(LCCT)附近的关税局领酒,这也是让人有点困扰的事,除了因为路途有点遥远费时之外,也因为处理完整个领酒过程也要看当天人多不多,以个人最近一次经验来说,驾车一来一回路途时间加上关税局手续时间差不多花了三个多小时才顺利把酒带回家开箱。

5) At the Custom Office---there's basically 3 steps involved:-
FIRST---go to the storage counter to claim your parcel by showing either letter or the SMS from POS MALAYSIA which include code for your parcel. 
SECOND---take that parcel/box to the next counter where a custom officer will attend to you and usually they will tell you to ‘ BUKA”(open up in Bahasa Malaysia--which could also mean undress depending on the occasion :)  ---so you will need to open up the parcel/box and show what's inside---more often than not you will need to pull out the bottles one by one and explain what it is--or why the label looks like that---or why a beer bottle contain a cork (because only wine needs a cork they said)----or what is a LAMBIC---why they are NOT wine(higher taxes for wine)---things like that..
The officer in charge will write  down the total Volume of the content---also average ABV---as well they will ask for either actual cost of the box or at least estimated one because there's sale taxes involved( regardless if you get it for free or otherwise).
THIRD---after the officer is satisfy that he/she has taken all necessary notes---the papers will be handed over to you to proceed to the next counter---which is essentially the counter where they will calculate and decide how much money is parting from your wallet.
5)在关税局,基本流程三个步骤,先去储物间填写资料把箱子领出来,然后到检验站开箱让官员检视记录箱子内有什么,官员需要的资料包括啤酒总量多少公升,平均酒精含量,什么价位买的,就算是朋友免费增与,官员也会要求估价,这些记录将被送去最後一站税务估算处决定需要给多少钱才能把酒箱子带回家。这意味着就算每次都有朋友免费从国外寄酒来,卡在关税局的话还是得缴些入口税酒精税销售税等等的才能把被列为敏感货物的啤酒领走。

6) how much are you expected to be charged? that will depend on a few factors---basically the higher the TOTAL VOLUME ( meaning 12 cans of 500ml will be lower than 12 bottles of 750ml)--also the higher the average ABV the higher the sin tax will be---and then the higher the prices for the goods then the higher the other taxes will be.
From my understanding---the final cost is based upon import tax+ excise duty + sale taxes---*if i'm not wrong the LOGISTIC cost from original point to Malaysia is also part of the calculation.
IN SHORT---let's say you get a box of beers for FREE from overseas---and say average ABV at 6%---you will be looking at  paying something within the range of  RM 10-20 PER BOTTLE at least because they will still ask for an estimation of how much it might cost in USD or EURO even if it's actually gift bottles.
6)关于一个箱子代价多少钱的问题,其实没有统一答案,最後必须付多少税金取决于几个不同因素,首先是箱子装了几支啤酒,是750毫升还是小瓶装,然后要看酒精度,越高收费随着提高,再来是啤酒的美金或欧元价格,然后运输费也被纳入计算税务范围,各种税务加起来,就算啤酒是免费得来的,如果以酒精度6%为计算基准,单只是付给关税局的钱保守估计每一支要马币十多二十多块之间。

7) as for the time needed for beer mail to reach from original point to here---it would vary depending on your choice of method to getting the parcel/box out of custom storage---anything between 3 weeks to 2 months or more is expected.
One thing to note though---the custom storage place is only a common storage room with fans---no cold storage for beer mail boxes ( unless if you have special arrangements which is out of my topic here)---so it would be wise to avoid getting beers which are more sensitive to non-cold storage environment particularly IPAs....
7)关于从欧美寄过来到需要解决关税到最终把酒箱子扛回家需要多长时间问题,一定程度上选择委托邮政局/委托他人还是自己取酒会有时间上的差异,一般来说可能介于三个星期到两个月左右,至于说有没有可能到了本地海关不扣留检验直接放行送到家门口,这个可能性不是完全没有,但基本来说几率非常低。
在本地这个craft beer沙漠,自己从国外找酒寄进来的行为并不多见,也不符合经济效益,但如果你已喝到一定程度觉得市场供应满足不到需求,那就做好必须面对箱子被扣在关税局储物间只能付税领酒的心理准备吧,必须说的是,收藏酒箱子储物间是没有冷藏设备的,如果买的主要是IPANEIPA这些对温度时间敏感类型的话,等待领酒时间是会对啤酒鲜香程度造成折损的。
